High-Altitude Shade-Grown Coffee- grown and processed to a higher standard.
Colima is a small state in Mexico, and not as well known for coffee, though it produces some of the best! It is far from the regions to the south that have been having problems with the “Roya” plague that is harming many plantations. Our Arabica coffee is shade-grown, safely below the active Colima Volcano, in a ravine “barranca” at an altitude of 1265 meters.
Workers are paid far above average for day labor, and coffee pickers are paid above the local rate per kilogram. All of the farm is maintained organically and ethically. Fruit trees are sprayed with natural ingredients to prevent plagues of insects, bacteria, and fungus. We use natural traps to capture the coffee beetle, fruit fly, and avocado moth.
The region had an organic certification, but it was let to expire without notice. We continue to ensure organic practices for our coffee, and it sells well as not-certified organic. It is processed in small batches using filtered water, and dried on screens rather than on the common concrete patio. This gives a higher standard of cleanliness and less opportunity for fungus and bacteria.
