Recipe from Leon of the Dutch Deli:
I strip the leaves from the stem
Wash the leaves thoroughly to get rid of the sand and cut the leaves about 1/2 inch.
peel 4 big potatoes and cut those in dices wash them and put them in a pan, cover with water and add 2 teaspoons of salt.
Bring water to boil and add the kale on top of the cooking potatoes. Cover the pan with a lid and turn the heat to low. Cook for about 15 20 min till the potatoes-kale is done.
In the mean time I baked some diced up, thick cut bacon I bake it crispy and I use only the bacon but some people use the baking fat as well. Drain the water from the kale- potatoes mixture and mash the mixture as fine as possible. I put in 1 raw egg to make it smooth and I add the baked bacon and mix everything well.
Then I grab two plates and serve the diner to our hungry tummies. Eat well.
